Bulgur, a nutritious 'fast food', can cook in under five minutes depending on the size. Boil one part grain to two parts water until the water is absorbed and the grain is fluffy. Fine and medium grains are used in salads, of which tabbouleh is the best known, pilaf, and as an alternative to rice.

Medium and coarse grains are good for hearty soups, stews and casseroles or as a stuffing. Bulgur can also be used in baking. Commercially, it is manufactured by milling raw hard wheat berries, that have been cleaned and husked, into smaller pieces and further sizing or screening.

Three sizes are typically produced: fine, medium and large size granules. This process preserves the nutrient- and fiber-rich bran and germ layers and reduces cooking time. Wheat is naturally high in fiber and important micronutrients such as minerals and phytochemicals. One of the most common applications of this form of wheat is its use as base for products such as couscous and served alongside vegetables or meats. Download our latest paper.
